Cherry Good Sweet Potatoes

Ingredients:

1/2 can (21 oz.) Comstock® or Wilderness® Cherry Fruit Filling or Topping
4 sweet potatoes (2 lbs.)
2  Tbsp. butter or margarine
2  Tbsp. brown sugar
1/4 tsp. salt, optional
Miniature marshmallows

Directions:

1. Wash potatoes and pierce with a fork. Place in ring formation in microwave oven. Microwave on HIGH (100%) for 10-14 minutes, turning potatoes over after 5 minutes. Test for doneness after 8 minutes of cooking and remove any potatoes that are soft. Continue cooking remaining potatoes until all are soft. Wrap potatoes in paper towel and cool for 5 minutes.
2. Split potatoes in half and scoop out flesh. Whip potatoes with butter or margarine, sugar and salt until smooth. Spoon into a 1-1/2 qt. ovenproof casserole and smooth. Spread cherry filling over potatoes.
3. Heat oven to 350°F. Place marshmallows in ring on top of cherry filling. Bake 30-45 minutes or until warm and the marshmallows are lightly browned.
