Apple Ginger Upside Down Cake

Ingredients:

1   (21-oz.) can Comstock® or Wilderness® More Fruit Apple Filling
1/2 cup candied ginger, chopped
  1-2 tsp. ground nutmeg, to taste
1  pkg. 14.5 oz. gingerbread mix
  
Fresh Nutmeg Cream:

1  pint whipping cream
2  Tbsp. powdered sugar
1  dash nutmeg

Directions:

1. Preheat oven to 450°F.
2. In the bottom of 9 or 10” round pan, evenly spread the whole can of apple filling over bottom of the dish. Sprinkle candied ginger and nutmeg over the apples. Bake for 10 minutes.
3. Prepare gingerbread mix as package directs. Remove the hot apples from the oven and immediately spread the gingerbread batter over the apples.
4. Lower the oven temperature to 350-375°F (or as package directs) and return to oven for 25 minutes. Insert toothpick into center, cake is done when it comes out clean.
5. Cool 10 minutes, invert. Serve warm with optional fresh nutmeg cream.
6. Cream: Add the powdered sugar and nutmeg to the cream. Beat in chilled glass bowl with chilled beaters; beat on high until stiff peaks form.

Alternate: You can make in 6 individual small round dishes.
