Brie w/ Cherry Raspberry Sauce

Ingredients:

1  (21-oz.) can Comstock® or Wilderness® More Fruit Cherry Filling or Topping
1/2 pint fresh raspberries
1  tsp. balsamic vinegar
1   large Brie (1 to 1 1/2 lb.), room temp
  sugar to taste (optional)
1/2 cup pistachios, chopped

Directions:

1. In a small saucepan, combine cherry filling, raspberries, and balsamic vinegar (if fresh raspberries are tart, you may need to add sugar to taste). Bring to boil and immediately lower temperature to simmer. Simmer for 10 minutes stirring every two minutes.
2. Top the Brie with ¾ cup of sauce, and sprinkle with pistachios. Serve remaining sauce on the side for dipping.

Serve with water crackers, crustini, or toast points.

Bake time: 40-45 minutes
