Coconut Peach Crunch Pie

Ingredients:

1 (9”) shortbread pie crust
1 egg yolk, beaten
1  can (21 oz.) Comstock® or Wilderness® More Fruit Peach Fruit Filling or Topping
1  cup sweetened coconut flakes
1/2 cup all-purpose flour
1/2 cup sugar
1/4 cup butter or margarine, melted
1/4 cup wheat germ

Directions:

1. Brush bottom and sides of crust with egg yolk; set on a baking sheet. Bake in preheated 350ºF oven for 5 minutes or until light brown. Spoon fruit filling into crust.
2. In a small bowl, combine coconut, flour, sugar, butter or margarine and wheat germ. Mix until well blended. Spread over fruit filling.
3. Bake on baking sheet for 30-35 minutes or until filling is bubbly and topping is light brown.

Makes 6-8 servings
Bake time: 30-40 minutes
