Cherry Oatmeal Dessert

Ingredients:

2  (21-oz.) cans COMSTOCK® or WILDERNESS® Cherry Pie Filling
1/2 cup balsamic vinegar
1  cup butter (2 sticks)
1 1/2 cups packed light brown sugar
1  teaspoon baking soda
2 eggs
2 1/2 cups all purpose flour
3  cups quick-cook rolled oats
1  cup chopped pistachio nuts

Directions:

1. Preheat oven to 350°F. In a bowl combine pie filling and balsamic vinegar. Stir until combined. Set aside.
2. In a large mixer bowl, beat butter on high for 30 seconds. Add brown sugar and baking soda, beat until combined. Beat in the eggs. Add the flour and the oats.
3. Press 2/3 of the oat mixture in the bottom of an ungreased 13 x 9 x 2-inch baking pan. Bake for 15 minutes or until golden brown. Carefully spoon cherry filling over crust and crumble remaining batter over filling. Sprinkle pistachio nuts on top.
4. Bake 22-25 minutes or until top is golden brown. Cool 45 minutes in pan. Serve with your favorite ice cream.

Bake time: 40 minutes
