Cherry Mocha Charlotte

Ingredients:

2  Tbsp. strong coffee
2  pkgs. (3 oz. each) Lady Fingers
1  envelope unflavored gelatin
1/4 cup cool water
1  pkg. (5 oz.) cook-and-serve chocolate pudding
2 1/2 cups milk
1  cup heavy whipped cream
1  can (21 oz.) Comstock® or Wilderness® More Fruit Cherry Fruit Filling or Topping, divided

Directions:

1. Line sides and bottom of an 8” springform pan with Lady Fingers. Combine gelatin and water; set aside.
2. In medium saucepan combine chocolate pudding and milk. Stir constantly over medium heat until pudding comes to a full boil; remove from heat. Stir in gelatin and coffee; cool.
3. In large mixing bowl, whip cream. Fold in cooled pudding and 1 cup cherry fruit filling. Spoon into springform pan and freeze 3 hours. Remove sides of pan and top with remainder of cherry fruit filling.
