Apricot Chicken Salad

Ingredients:

3  cups cubed, cooked chicken
2  cups cauliflower florets
2  cups broccoli buds
1/4 cup green onion, cut up (including green)
1/4 cup chopped green pepper
1/2 cup celery, cut up
1/2 cup mayonnaise or salad dressing
2  Tbsp dijon mustard
2  Tbsp cider vinegar
3/4 tsp salt
1/4 tsp white pepper
1  cup Comstock® or Wilderness® Apricot Pie Filling or Topping
5  strips cooked bacon, drained and crumbled
1/4 cup toasted sliced or slivered almonds

Directions:

1. Combine chicken, cauliflower, broccoli, onion, pepper and celery in large bowl.
2. Blend mayonnaise, mustard, vinegar, salt, pepper and Apricot filling.
3. Stir into chicken-vegetable mixture.
4. Stir in crumbled bacon.
5. Refrigerate.
6. Sprinkle toasted almonds over just before serving.

Makes 8 to 10 servings
