Blueberry Pancake Puff

Ingredients:

3 eggs
1/2 cup milk
1/2 cup all-purpose flour
2  tsp. sugar
1/4 tsp. salt, optional
4  strips bacon, cooked crisp and crumbled
2  Tbsp. butter or margarine
1  can (21 oz.) Comstock® or Wilderness® More Fruit Blueberry Fruit Filling
1/3 cup maple syrup or pancake syrup
1/2 cup sour cream

Directions:

1. In small mixing bowl, beat eggs and milk; stir in flour, sugar and salt just until combined (batter will not be completely smooth). Stir in bacon. Heat butter in 10” oven-proof skillet until bubbly; pour in batter. Bake in preheated 425°F oven for 12 minutes. Reduce heat to 350°F. Continue baking 10-15 minutes, until golden brown. In saucepan, heat blueberry filling and syrup together until hot. Cut pancake into wedges; serve with blueberry sauce and sour cream.

Makes 16 servings
Bake time: 22-27 minutes
